Our products are delivered in cardboard boxes without any thermal insulation or ice. How is this possible?
Our products can stay at room temperature for 48 hours without any problems. Since they are already fermented and the fermentation process takes place between 20 and 28 degrees Celsius, fermentation could restart and some carbonation will develop in the jar, which will make your products all the more tasty.
Once you receive them, you can store them in the refrigerator.
The delivery of packages does not require a signature. If you are not available at the time of delivery, your package will be left at your door or in a secure location.
Products
Refrigeration slows the fermentation of our products, but does not stop it... and some of our batches are particularly active! It is therefore recommended to keep your products in a cool place, at about 15 degrees Celsius. Since these are raw products, refrigeration is used to slow down the fermentation process. The simplest way is to keep them in the refrigerator, but unrefrigerated cold rooms or the basement are also good options.

No, Tout cru! products do not make noise when opened. They are cold-packed, which means they are not cooked or pasteurized.
In grocery stores, however, most pickles and sauerkraut you'll find on the shelf are pasteurized to create a vacuum seal that makes them stable at room temperature. So when the vacuum seal is broken, a sound is heard when you first open the jar.

Yes, it's perfectly normal!
When some of our products show signs of carbonation (especially when the lid is domed), it means that the batch was particularly active or that there is a fermentation process going on in the jar. Refrigeration slows down the fermentation of our products, but does not stop it!
When you notice that the jar lids are domed or that the product is sparkling, you have proof that you are eating a lively and healthy food!

We suggest consuming the products within 3 to 4 weeks of opening.
Yes, absolutely! Lactofermentation or lactic fermentation, despite its misleading name, has in fact no connection with dairy products. Our products are lactose-free and 100% vegan.
