Our products are delivered in cardboard boxes, without thermal insulation or ice. How is this possible?
Our products can remain at room temperature for up to 48 hours without any problems. Being already fermented, they continue their natural fermentation process at temperatures between 20 and 28 degrees Celsius. This can lead to a resumption of fermentation and slight carbonation, making your products even tastier.
Once received, simply store them in the refrigerator to preserve their quality.
Parcel delivery does not require a signature. If you are absent at the time of delivery, your package will be left in front of your door or in a safe place.
Products
Refrigeration slows down the fermentation of our products, but does not stop it, and some batches can be particularly active! We therefore recommend keeping them in a cool place, ideally around 15 degrees Celsius. Although it's easiest to keep them in the fridge, spaces like a non-refrigerated cold room or a basement are also good options for slowing down the fermentation process, as these are raw products.

No, Tout cru! products make no noise when opened. They are cold-packed, which means they are neither cooked nor pasteurized.
On the other hand, most grocery store pickles and sauerkraut are pasteurized to create a vacuum seal that makes them stable at room temperature. This is why, when this vacuum seal is broken, a noise is often audible when the jar is first opened.

Yes, it's perfectly normal!
When some of our products show signs of carbonation, such as a domed lid or slight fizz, this means that fermentation is still underway and that the batch was particularly active. Refrigeration slows down fermentation, but does not stop it completely. So it's a sign that your products are fresh and alive, bursting with flavor and health benefits.
So if you notice a domed lid or a slight fizz, you can rest assured that you're eating a healthy, living food, in all its freshness and fermentative richness!

We recommend consuming products within 3 to 4 weeks of opening.
Yes, absolutely! Despite its name, lacto-fermentation has nothing to do with dairy products. The process uses lactic acid, produced naturally by bacteria during fermentation, but does not include any dairy products. Our products are therefore entirely lactose-free and 100% vegan.
