The classic dumpling slightly tangy thanks to our Organic Sweet Kimchi Nappa, with Asian flavours of grilled sesame and shiitake mushrooms, accompanied by its sesame sauce. A trip to Asia for your taste buds!
In a large skillet, heat 1 tablespoon of toasted sesame oil over medium heat.
Sauté the garlic for about 30 seconds, then add the tofu. Cook for 5-7 minutes, or until lightly browned.
Add the shiitake mushrooms and continue cooking for 5 minutes.
Deglaze the tofu and mushrooms with the tamari and maple syrup, then add the chopped kimchi. Reduce heat to medium-low and cook 2-3 minutes.
Add the green onions and cook 2-3 minutes. Make sure all liquid is absorbed/evaporated and set aside.
Allow cooling to room temperature before assembling the dumplings.
Assembling the dumplings
Wet the edges of a dumpling dough by turning it in a small bowl filled with water.
Place the dough on a clean surface.
Place the equivalent of a generous teaspoon of dumpling filling in the centre of the dough.
Close the dough like a small taco, then fold and pinch one side against the other (watch some youtube videos to get a better grasp of how to close dumplings).
Arrange the dumplings ready to bake in a plate covered with a cloth so that they do not dry out during the assembly of the dumplings.
Baking dumplings*
In a large non-stick skillet, heat 1 tablespoon of toasted sesame oil (depending on the size of your skillet) over medium heat.
If desired, sprinkle sesame seeds over the entire surface of the oiled pan, then arrange as many dumplings as possible.
Fry for about 5 minutes or until the underside of the dumplings is golden and crispy.
Add ¼ with water (be careful when pouring, it can splash), cover, lower the heat to low-medium and steam the dumplings for 3-4 minutes, or until the dumplings are slightly translucent.
Enjoy hot with the sauce.
Keep uncooked dumplings in the freezer, not in the fridge. Simply take them out and cook them directly as mentioned above.
For the sauce
Dissolve the sugar in hot water.
Add all the other ingredients and mix.
Enjoy with freshly fried and/or steamed dumplings.

* We have chosen to fry the dumplings, but you can also opt for steaming.
